Sugar Free Macaroons

Oven Temp: 350F

Ingredients:

1 egg, separated

1c Sugar Twin

2c cornflakes

1c shredded coconut

1/2c chopped pecans

1/2t almond extract

Beat egg white until stiff but not dry. Fold in sweetener equivalent to 1c sugar. Add remaining ingredients. Drop by teaspoonfuls onto greased baking sheet. Bake 12 minutes. Remove from pan at once.Makes about 3 1/2 dozen cookies. Each cookie is 1/2 fat, 24 calories.
