Devil's
Food Cake
(Diabetic)
SERVES :18 (1 cake)
Ingredients:
1/2 cup
cocoa
1/2 cup boiling water
2 cups cake flour
1/2 t baking soda
1 1/2 t baking powder
1/8 t salt
1/3 cup sugar
3/4 cup liquid egg substitute at room temperature
Liquid sugar substitute to equal 3/4 cup sugar
1 t vanilla
1/2 cup (1 stick) margarine at room temperature
1. Stir together cocoa and boiling water until smooth. Set aside to cool to room temperature.
2. Place flour, soda, baking powder, salt and sugar in mixer bowl and mix at low speed about 1 minute to blend.
3. Add egg substitute, sweetener, and vanilla to cocoa mixture and mix well.
4. Add margarine to dry ingredients along with cocoa mixture and mix at medium speed about 1 minute or until well blended.
5. Pour into a 9-inch square or 9 x 13 cake pan that has been greased with margarine.
6. Bake at 350 F for about 30 minutes, or until cake tester comes out clean and the cake pulls away from the sides of the pan.
7. Cool in the pan and cut 6 x 3 to yield 18 pieces.
8. Allow 1 piece per serving.
