Mistys Breakfast Muffins
While at first it appears this is alot of work, the benifits of having a weeks worth of easy, nutritional meals to go at low cost is worth it
Stuff you need; English muffins; eggs & cheese to match. pre-cooked; bacon,sausage, pork roll canadian bacon or whatever.
butter or marg,pam, egg ring. *see notes*
OK! Toast and lightly butter the muffins In a pan sprayed with Pam®, place your egg ring add a dollop of butter. Crack an egg in it, and gently break the yolk.When it is set remove ring, and flip, top with pre-cooked meat. Cook for 1 minute. Place on buttered muffin and top with cheese. Keep going till your done ~LOL~
*If you don't have an egg ring, a small tuna can with both ends removed works as well. Or a tin foil mold. Now to finish; wrap in wax paper 1st, then in foil. Mark what it is and date (right) (never last here!) To eat; remove foil I use auto defrost in my micro for 2:30 minutes you will have to play with this.
